Does getting circumcised as an adult hurt? Will it leave a scar?

It's a surgery, and has a recovery time, yes it's going to hurt. It will leave a scar, but, being where it is... You'll never notice once it's healed and neither will she! Once it's healed, your risk of urinary tract infections and just generalized skin infections "down there" will be reduced!

My penis grows when erect, will this stretch out the stitches and hurt or possibly open the cut?

I would suspect that for a time your body would naturally "avoid" completing the full arousal cycle to the complete engorgement of the penis as a natural response to avoid pain.

The closest example of the body's ability to compensate comes from an operation I had on my nose about 45 years ago. They went in and cut some cartilage out of my septum to help me breathe better.

After my first post-op visit, my surgeon said, "By the way, don't sneeze through your nose."

I panicked. Up until then, I had always sneezed through my nose.

About a week later, I had a sneeze coming that I could not avoid.

I was afraid my head was going to explode when I sneezed through my hose, but instead it the blast of air came out of my mouth---all without my doing a thing consciously.

And since then, I can sneeze either through my mouth or through my nose as I choose.

Definitely a question for the doctor if you are going to have the surgery done.

I've had surgery in that area. Kinda. Sorta. Well, close. Yes, it can be a little painful but they'll give you pain killers.

Of course, I'm assuming you're getting it done by a surgeon and not by some witch doctor. If that's the case, go read Ancient Hippy's answer again.
