How defrosted is it? If you keep it in a deep cool them 24 hrs. Its what places like red lobster do when defrosting a pallet of tails. I would try a bare brine if you plan on keeping it longer.

Likely theyre small baby flies not gnats. Do they hang out in the kitchen near the fruit? Bannas? A lot of times they are brought from the supermarket as larvae and hatch in the ripening fruits

use your vacuum cleaner with the hose attachment. Takes a few minutes but they can't fly very fast.
