I think on that movie 7 pounds, it was because all the organs together weighed 7 lbs. Debbie

Depending on the size of the cavity of the chest, and the health of the individual, anywhere from 1 to 2 lbs. Hope this helps.

My theory is related to the well known Shakespeare play - The Merchant of Venice. This is where we get the saying "paying a pound of flesh" for a wrong doing. So in atonement for causing the loss of the seven lives, the character played by Will Smith, gives seven metaphorical pounds of his own flesh.

According to the text book HUMAN ANATOMY & PHYSIOLOGY, by Elaine N. Marieb/Katja Hoehn,
"About the size of a fist, the hollow, cone-shaped heart has a mass of between 250 and 350 grams - less than a pound."
