Eating healthier doesn't make you lose weight. Eating less does. If you don't want to eat less, start running for an hour each day.
Why haven't lost much weight? I walk every day twice a day and I eat healthier. I went from 179 to 172 and it's been weeks and I'm still 172 when I check the scale
1 - get a scale that shows body weight, fat%, and water%.
2 - Even if you're eating healthier, if you're not burning those calories you aren't going to lose weight. Walking doesn't burn many calories.
3 - You need to increase your metabolism. You can look up simple things to do, online. Don't believe the supplements that say they can, Consumer Reports shows most of those claims as false.

Think of these weeks as an opportunity to get to know and understand your body; how it works, what it needs, what makes you feel good.
Because truthfully, if you have been walking and eating healthfully for, say, seven weeks to lose those seven pounds, and you feel good and strong with happy disposition, and you could keep this up for a long time, then I would say that pound-a-week weight loss is absolutely excellent.
